Rosebud Cupcake Recipe


Hey everyone! Today's post is exciting because we rarely do baking posts, even though we both absolutely love to bake. We will be sharing a recipe from The Hummingbird Bakery for chocolate cupcakes with vanilla icing. We have also used some cute little rosebuds to decorate the cakes, which you can buy here.

(p.s. sorry the photos aren't amazingly positioned or anything - we forgot to take blog quality photos before eating haha!)

INGREDIENTS

For the cake: (makes 12)

  • 100g self-raising flour
  • 20g cocoa powder
  • 140g caster sugar
  • 1 1/2tsp baking powder
  • 40g unsalted butter, at room temperature
  • 120ml whole milk
  • 1 egg
  • ¼tsp vanilla extract 
  • rosebud decorations (ours are from Tesco)
For the icing: (for 12)

250g icing sugar, sifted
80g unsalted butter (at room temperature)
25ml whole milk 
vanilla extract (a couple of drops)



RECIPE
1. Preheat the oven to 170°C (325°F) Gas Mark 3.

2. Put the flour, cocoa powder, sugar, baking powder, salt and butter in a bowl and use an electric whisk to slowly combine the ingredients until they mix together to form a sandy texture/consistency.

3. Whisk the milk, egg and vanilla extract together in a jug, then slowly pour about half into the flour mixture, beat to combine and turn the mixer up to high speed to get rid of any lumps.
4. Turn the mixer down to a slower speed and slowly pour in the remaining milk mixture (scrape any unmixed ingredients from the side of the bowl with a rubber spatula). Continue mixing for a couple more minutes until the mixture is smooth. Do not overmix!!
5. Spoon the mixture into the paper cases until two-thirds full and bake in the preheated oven for 20-25 minutes. To test whether or not they are done, a skewer or fork inserted in the centre should come out clean. Leave the cupcakes to cool slightly in the tray before turning out onto a wire cooling rack to cool completely.
6. When the cupcakes are cold, spoon the chocolate frosting on and decorate with one rosebud on top.
